 Lambic Fruit Beers: These beers are very unusual as the process involves leaving the mash in ventilated lofts in copper tanks to cool. The ventilated lofts allow naturally occurring wild yeast to be introduced, thus starting the fermentation process. A second fermentation takes place when fruit is added, which makes a champagne-like beer. Most lambic brewers are around Brussels. The lambic beer without fruit is called Gueuze.
